Tteokbokki (떡볶이): Korea’s Ultimate Street Food Favorite

Discover the History Behind Korea’s Beloved Spicy Rice Cakes and How to Make Authentic Tteokbokki at Home

Tteokbokki (떡볶이) is the undisputed king of Korean street food and a treasured comfort dish across South Korea. It features chewy, cylindrical rice cakes (tteok) simmered in a rich, glossy, sweet-and-spicy sauce made from gochujang (Korean chili paste) and gochugaru (Korean chili flakes). Often paired with sliced fish cakes (eomuk), scallions, and hard-boiled eggs, every bite delivers a addictive combination of chewy texture and bold heat.

While non-spicy rice cake dishes (Gungjung Tteokbokki) were served to royalty during the Joseon Dynasty, the modern spicy version was born in the 1950s in the Sindang-dong neighborhood of Seoul. Created by a street vendor named Ma Bok-lim, who accidentally dropped rice cakes into a spicy sauce, this version quickly captured the hearts of students and workers for its affordability and deeply satisfying flavor. Today, Tteokbokki can be found everywhere from bustling street stalls (pojangmacha) to dedicated Tteokbokki restaurants around the globe.

Difficulty Rating: 2 / 5

(Quick and simple to cook; the key is reducing the broth to achieve the signature thick, glossy sauce texture!)

Ingredients

For the Main Dish:

  • 1 lb (450g) Korean cylinder rice cakes (garaetteok)
  • 2 sheets Korean fish cakes (eomuk), rinsed in warm water and cut into bite-sized triangles
  • 2 cups kelp and anchovy stock (or vegetable stock/water)
  • 2 green onions (scallions), cut diagonally into 2-inch pieces
  • 2 hard-boiled eggs, peeled (optional)

For the Tteokbokki Sauce:

  • 3 tbsp Korean chili paste (Gochujang)
  • 1 tbsp Korean chili flakes (Gochugaru) — adjust for heat
  • 1 tbsp soy sauce
  • 1.5 tbsp sugar (or corn syrup/honey)
  • 1 tbsp minced garlic

For Garnish:

  • 1 tsp toasted sesame seeds
  • Finely sliced green onions

Step-by-Step Preparation Method

Step 1: Prep the Rice Cakes

  1. If using refrigerated or frozen rice cakes, soak them in a bowl of warm water for 15 to 20 minutes to soften. Drain well before cooking.

Step 2: Prepare the Sauce and Stock

  1. In a small bowl, whisk together the gochujang, gochugaru, soy sauce, sugar, and minced garlic until smooth.
  2. In a wide skillet or shallow pot, bring the kelp and anchovy stock to a boil over medium-high heat.
  3. Stir the prepared sauce paste into the boiling stock until fully dissolved.

Step 3: Simmer the Ingredients

  1. Add the softened rice cakes, cut fish cakes, and hard-boiled eggs into the simmering sauce.
  2. Reduce the heat to medium and cook for 8 to 10 minutes, stirring frequently so the rice cakes do not stick to the bottom of the pan.
  3. The dish is ready when the rice cakes become soft and chewy, and the sauce thickens into a rich, glossy glaze that coats the back of a spoon.

Step 4: Add Scallions and Garnish

  1. Toss in the green onions during the last 2 minutes of cooking to keep them vibrant and fresh.
  2. Remove from heat, transfer to a bowl, and garnish with toasted sesame seeds and extra green onions.

Chef’s Tips for Success

  • Don’t Overcook the Rice Cakes: Watch the heat closely while simmering. Overcooking can make the rice cakes mushy instead of pleasantly chewy (s쫀득쫀득 – jjondeuk-jjondeuk).
  • Anchovy Stock is Key: Using traditional Korean anchovy and kelp stock instead of plain water adds a deep umami base that balances the sweet and spicy elements of the sauce.
  • Add Mozzarella Cheese: Top your hot Tteokbokki with shredded mozzarella and melt it under a lid for a trendy, extra-creamy “K-Cheese Tteokbokki” variation!
